Overview:

  Under the supervision of Food Services management, the Hospital Food Service Supervisor has the responsibility within Food and Nutrition Services to assist in the coordination of department development as well as with planning, organizing, staffing and supporting the direction of operations and personnel in the kitchen, cafeteria, catering, Patient Call Center and Patient Room Service. In collaboration with all leadership, a combination of core and secondary responsibilities are achieved in order to provide continuous excellent service to Mercy patients, guests and co-workers. Supervisor performs duties and responsibilities in a manner consistent with our mission, values and Mercy Service Standards.  

Job Description: 

 

- Operational and Budgetary Performance
- Monitors and assists with the effectiveness of staff work schedules and suggests adjusting as necessary to assure all work is completed while staying within budgeted FTEs. Makes adjustments to daily staff assignments according to patterns and demands.
- Ensures excellent service standards are completed in a timely manner.
- Makes recommendations to the managers, through effective communication, regarding service enhancements and improvements.
- Monitors daily the portion control, appropriate food temperatures, product acceptability, as well as food preparation, presentation and quality.
- Reviews staff timecards on a weekly basis for accuracy, attendance and leave, as well as approves timecards bi-weekly for payroll.
- Assures areas are maintained in a clean and safe manner by building cleaning schedules and holding staff accountable to meet sanitation standards of the State Health Department.
- Verifies the appearance of staff daily to assure department policies, as well as state and local safety standards are being satisfied.
- Participates in recruitment for the selection of new staff, as well as directs and develops standard work for jobs accordingly.
- Provides support for all special events in the cafeteria and caterings to ensure success.
- Supports the purchasing, receiving and issuing of food and supplies within the department as needed.
- Verifies appropriate money handling, deposits and accounting of food sales and/or other merchandise in the cafeteria daily including safe counts, change orders and financial reporting.
- Training and Development
- Monitors annual calendar to ensure all mandatory training/education requirements, both personal and staff, are up to date.
- Develops and evaluates departmental staff through orientation, ongoing observation, in-service education and continuous training, by conducting weekly staff meetings and scheduled on-the-job training regularly.
- Evaluates all staff fairly, consistently, in a timely manner and in accordance to procedure, as well as provides hard copies to the manager prior to completion for reviewing purposes.
- Maintains individual staff files, assists with counseling and assigning disciplinary action(s) as situations dictate, uses proper documentation consistently, appropriately and according to department procedures.
- Quality Assurance
- Responsible for maintaining standards of safety, sanitation and professional appearance as established by the department policy and procedures and/or any local, state and federal governing agencies including Joint Commission.
- Monitors the delivery of patient meals, verifying each is delivered according to procedure and in a timely manner.
- Verifies patient Room Service line for tray accuracy according to physician orders and patient safety, in regard to allergies, identifying missing items, inappropriate items, and proper portions.
- Monitors the stocking of galleys to assure par levels are accurate, as well as the nourishments and tube feedings to assure they are prepared, stored and delivered according to policy.
- Verifies daily documentation of food temperatures, patient meal refrigerator temperature logs and tray servicing to assure completion and accuracy.
- Participates in patient Meal Rounds daily with patients and staff to assure service provided is excellent, while documenting and reporting data weekly for trending.
- Checks areas and equipment for safety, sanitation and proper operation and storage on a daily basis.
- Reports any service repairs or unsafe working conditions to Facilities and follows up regularly to assure all issues and work orders are resolved and corrected.
- Monitors proper use of standardized recipes to assure they are nutritionally correct, as well as the accuracy of production sheets.
- Assists the managers with researching and presenting new recipes, services and processes in the kitchen, cafeteria and catering.

 

Qualifications:  

Education: High school Diploma or equivalent. In lieu of education, at least 2 years of lead or leadership experience may be considered.

Preferred Education: Associates Degree or above.
Preferred Experience: 2 years experience in food service, acute care, or hospitality setting.

Other: The physical demands described here are the representative of the minimums that must be met by an employee to perform all essential functions of the job. Most physical demands are below, plus: Minimal: kneeling or crouching, carrying of < 20 lbs, Push/pull < 12 lbs force, pinch grip, data entry Occasional: balancing on slippery surfaces. Continuous: gripping < 30 lbs, hand coordination.
