Department Purpose

Work alongside the winemaker in overseeing and participating in all winemaking functions in UCD Viticulture and Enology winery and enology classes.


Job Summary

Under general direction of the Winery Manager, lead day to day activities in the Sustainable, Teaching and Research Winery and Jackson Building. Responsible for interpretation and implementation of specific and general policies and procedures, particularly those related to winemaking, general winery and lab operations, safety, and food safety programs. Perform routine specialized research winemaking duties throughout the year.

Provide support for principal investigators, students, staff and industry leaders to facilitate wine research and classroom instruction, including course laboratories. Provide training and supervision to winery interns throughout daily operations. This support encompasses all work performed in the sustainable teaching and research winery and Jackson building. Monitor fermentations, perform press and racking operations, perform analytical measurements using various instruments. Manage bottling operations. Record results of all procedures and manage data. Prepare stock solutions. Support enology courses and train graduate and undergraduate students in proper use of equipment and winery safety. Assist with the sustainability goals for the department, including water, energy and incorporation of environmental friendly practices. Recognize issues with cellar, wines, students, research, and equipment and proactively determine solutions to discuss with the Winery Manager. Responsible for cleaning and organizing winery equipment and winery rooms, including the Jackson Winery building. Independent Maintenance and repair of winery equipment involving some electrical wiring, plumbing, and carpentry.

PHYSICAL DEMANDS

  • Routinely lift up to 50 pounds.
  • Work in all kinds weather conditions.
  • Perform repetitive tasks for periods of up to two hours.

WORK ENVIRONMENT

QUALIFICATIONS

 

Required:

 

Minimum Education/Experience

  • Masters Degree in Enology, Fermentation Science, Chemistry, Microbiology, or related field or combination education and experience at a commercial winery

 

  • Experience in wine production grapes to bottle, including fermentation and experience using winemaking equipment for at least one harvest.

 

  • Experience using, maintaining and repairing analytical equipment including spectrophotometers, chromatographs, pH meters, balances, and titrators.

 

  • Experience with laboratory and winery chemical safety.

 

  • Experience training, evaluating, motivating, and resolving problems/conflicts and build effective service-orientated team environment.

 

  • Experience maintaining and repairing winery equipment.

 

  • Experience keeping records using computer-based database programs, including, but not limited to Microsoft Word and Excel.

 

Minimum Knowledge, Skills, and Abilities (KSA)

  • Communication skills to interact and communicate with faculty, staff and students to convey instructions.

 

 

Preferred:

Preferred Education/Experience

  • Experience with wine production and federal and state wine- related regulations, including but not limited to labeling requirements and taxation.

 

  • Experience in lab instrumentation, repairs, and maintenance.

 

  • Experience with research projects in the wine industry.
